This delicious and quick winter soup is perfect for when there is not a lot of time at hand but still fancy something fresh….


225g Potatoes

2 leeks

1 onion

1 clove garlic

Vegetable Stock

Swirl of Cream


Chop the onion and potatoes, crush the glove garlic and slice the leeks. Fry all of them in a pan with olive oil till soft. Then add 1.2 litres of Vegetable stock. Bring to boil, season and simmer till the vegetables are tender. Whizz in a blender until smooth and serve with a swirl of cream and crunchy croutons.
